Preheat oven to 350. Rinse fillets under cold
water, pat dry with paper towels. Arrange fillets
in a large oven safe platter. Sprinkle with salt,
peper, lemon juice, and snipped dill. Add wine.
Cut 2 tbsp butter in small pieces and place on
top of fish. Cover dish with foil, bake 25
minutes.
Meanwhile, in 3 tbsp hot butter in medium skillet,
over low heat, sauté mushrooms until tender. about
10 min. remove from heat.
Remove fish from oven. Carefully drain off fish
liquid. Liquid should measure 1 1/2 cups. Make
sauce- add flour to mushrooms, stir until smooth.
Stir in reserved fish broth and cream. Cook over
medium heat stirring constantly, until mixture
boils, reduce heat and simmer 5 minutes. add
shrimp.
Pour sauce over fish. Prepare mashed potato. Wish
mashed potato in a pastry bag with a number 6
tube, make lattice pattern over the fish and
around edge. When ready to serve preheat oven to
350. Place in oven until bubbly and hot and potato
is lightly browned. About 40 minutes. Garnish with
dill.
