     Carrot Cake

Ingredients
2 cups granulated sugar
1 1/2 cups vegetable oil
4 eggs
2 tsps baking soda
2 cups flour
2 tsps cinammon
1 tsp salt
1 cup sweetened flaked coconut
1 cup chopped walnuts
 
3 cups grated carrots (about 1 lb)

Instructions
Preheat oven to 350 degrees. Coat 9 x 13 pan with cooking spray. In large bowl, combined all ingredients. Blend with electric mixer until smooth, thick batter forms. Pour into pan. Bake for 40 - 45 minutes or until toothpick comes out clean.
