     White Chili

Ingredients
1 lb White Beans, rinsed. (Soak overnight)
6 cups Chicken Broth
1 tsp Chicken Boullion
2 Onions, chopped
1 T Oil
6 to 8 cloves of Garlic
7 oz diced Green Chilies
4 tsp ground, Cumin
2 tsp dried, Oregano
 
2 tsp Cayenne Pepper
4 cups cooked, diced Chicken
1 cup Sour Cream
1 cup Monterey Jack Cheese, shredded
GARNISH- sour cream, chopped green onions, tomatoes, avocado, cilantro

Instructions
Combine beans, broth and chicken boullion in large stock pot. Simmer until beans are tender. Saute onions in oil until golden. Add onions, garlic, chilies, cumin, oregano, cayenne pepper and chicken to beans. Simmer for 30 minutes. Add sour cream and cheese. Heat until cheese melts. Garnish accordingly.
