     Vegitarian Shepherd Pie

2 - 15 oz cans kidney beans, drained and rinsed
1 - 16 oz jar salsa
1 can peas and carrots, drained
1 cup water
1/4 cup skim milk
2 Tbsp butter
1/4 tsp salt
1 1/4 cup dry mashed potato mix
2 Tbsp grated parmesan cheese

In skillet; heat beans, salsa, peas and carrots to boiling. Reduce heat to low, cover and simmer for 15 minutes.
Make potatoes with skim milk, water, butter and salt. Let stand until the liquid is absorbed.
Spoon potatoes onto bean mix, cover and simmer for 5 minutes. Sprinkle cheese on top.
