     Bayou Chicken Pasta

1 c. Chopped onion
1 c. chopped celery
1/2 c. each chopped green and yellow pepper
3 tbs. olive oil
1 lb. boneless skinless chicken breasts, cubed
2 tsp. garlic powder
1 jar (16 oz.) salsa
1 tbs. cornstarch
1 tbs. water
1 tbs. dried parsley flakes
1/2 tsp. salt
1/4 tsp hot pepper sauce (optional)
Hot cooked pasta

In a large sauce pan, saute onion, celery, and pepper in olive oil for 3-4 min. or until crisp-tender. Add chicken and garlic powder; cook for 4-5 min. or until chicken juices run clear. Stir in salsa.
Combine cornstarch and water until smooth; gradually stir into chicken mixture. Bring to a boil; cook and stir for 2 min. or until thickened and bubbly. Add the parsley, salt and hot pepper sauce. Serve with pasta.
