     Sausage & Bacon Hot Pie

Ingredients
2 Ib. bacon
2 lb. sausages
salt and pepper to taste
10 large peeled potatoes
2 oz. oil
2 pts. water
pinch of thyme
2 small sliced onion
chopped parsley
 

Instructions
Heat oil in pan, brown sausages and lightly saute bacon. Slice potatoes thinly. Mix potatoes with herbs and onions and season with salt and pepper.
Layer an ovenproof dish with potatoes. Place sausages and bacon on top of potatoes. Neatly arrange an overlapping layer of potatoes on top.
Pour water over all ingredients. Cook in pre-heated oven at 430 degrees till lightly colored. Reduce heat to 340 degrees and cook for a further 30 minutes.
Press down potatoes occasionally during cooking. Brush potatoes after cooking with melted butter and sprinkle with chopped parsley.
Serving Suggestions
Buy frozen hash browns instead of slicing up potatoes. We put potatoes in a glass 9X13 and put them in microwave until finished due to lack of time.
