     Giant Empanadas

Ingredients
1 lb ground beef
1 onion, chopped
1 bell pepper, chopped
14 oz can of diced tomatoes, undrained
1 Tbsp chili powder
1 tsp ground cumin
1 tsp salt
1/2 tsp pepper
2 refrigerated folded pie crusts
 
1 egg yolk mixed with 1 Tbsp water

Instructions
Cook beef, onion, and bell pepper in skillet until meat is done. Stir in tomatoes, chili powder, cumin, salt, and pepper. Simmer uncovered stirring occasionally, 15 minutes.
Place 1 unfolded pie crust at one end of a greased cookie sheet. Place half of beef mixture on half of pastry round leaving a 1 inch border. Fold other half of pastry over filling. Press edges to seal
Brush pastry with yolk mixture. Repeat with remaining crust and beef mixture at the other end of the cookie sheet.
Bake in preheated 400 degree oven for 20 minutes until pastry is golden and filling hot. Cut each in half.
