     PECAN-CRUSTED CHICKEN TENDERS

Ingredients
vegetalbe oil, for frying
salt and fresh ground pepper to taste
1 C flour
2 eggs beaten with a splash of milk
1 C plain bread crumbs
1 C finely chopped pecans
1/2 tsp nutmeg
zest of 1 orange
 

Instructions
Heat 1 1/2 to 2 inches oil over medium high heat in a skillet
Season chicken tenders with salt and pepper. Set out 3 shallow dishes. Place flour in one, beaten eggs in a second, and combine bread crumbs with ground pecans, nutmeg and orange zest in a third. Coat tenders in batches in flour, then egg, then bread crumbs. Fry tenders in small batches 6-7 minutes, drain them on paper towels
Serving Suggestions
serve with salad with tangy maple barbecue dressing
