Line a 13x9 baking dish or roasting pan with tin foil going both ways, with enough to close over the roast. Spray with cooking spray.
Place a layer of onion rings and sprinkle with flour.

Season roast with salt, pepper and garlic.
Sear roast in super hot pan with olive oil on ALL sides.

|
|
In seperate bowl, mix together soups and spread over the roast.
Sprinkle with flour.
Place the rest of the onions and mushrooms on top and close the foil.

|
|
Bake at 325 for about 30 min per pound of roast.
For a large roast you may want to double the rest of the ingredients.

Tear it up the next day and serve it over egg noodles.
