     Copper Mountain Spinach Quiche

1 9 inch deep dish frozen pie crust (or home made if you prefer)
1-10 oz pkg frozen chopped spinach, cooked according to package instructions.
2 T flour
6 slices cooked bacon, crumbled up
3 eggs, slightly beaten
1/2 c. mayo
1/2 c. milk
1/4 c. finely chopped onions
1 c. sliced fresh mushrooms
1 c. shredded cheddar cheese
1 c. shredded swiss cheese

Poke holes in the pie crust and partially bake for 10 min.
Squeeze water from the spinach. Combine spinach and flour and stir well. Add the remaining ingredients and stir until well mixed.
Pour into partially baked pie crust and bake at 350 for 50 min.
