     Cilantro Lime Rice

2 cup white rice
4 cups water
2 tsp. chicken bouillon
1/4 cup lime juice
1/4 cup chopped cilantro
2 Tbsp butter or olive oil (or a combination of both)
salt to taste

In a cooking pot with medium-high heat, fry the rice in the butter until golden brown, stirring to brown evenly.
Add water and bouillon and bring to a boil. Cover, reduce heat to simmer for 20 minutes.
Stir in lime juice and cilantro.
Serving Suggestions
Useful as a flavorful side dish or as a filling for tortillas
