     Eggs Masala

Ingredients
6 Hard boiled eggs - sliced in half
1 1/2 Large White Onions - thinly sliced into strips
5 Large Plum tomatoes - chopped or 2 cans diced tomatoes
1 Tbls. Garlic - minced or chopped fine
1 tsp. Black Mustard Seed
1 tsp. Garam Masala
3 - 4 Green Chilis - chopped
Salt to taste
4 Tbls Ghee or Oil
 
1 tsp. Cumin Seed or 1 tsp. cumin powder

Instructions
1. Hard boil 6 eggs - peel and slice in half. 2. Melt 4 Tbls Ghee (or Olive Oil) over medium heat and add sliced onions. 3. Brown until very dark gold.
4. Add sliced chilis and continue browning until very dark. 5. Remove Onions and Chilis from the frying pan and place into a bowl. Add 1 Tbls water and stir. Set aside. 6. In the same frying pan, add Black Mustard Seed and Cumin Seed and cook until they pop.
7. Add tomatoes and garlic and cook until tomatoes start to brown and the liquid begins to thicken. 8. Add onion/chili mix. 9. Add Garam Masala and stir another 3 minutes.
10. Add salt to taste. 11. Add sliced eggs on top, yolk side down, and let simmer until masala is the consistency that you like.
Serving Suggestions
Serve with Chapatis or toast. This makes a wonderful breakfast, lunch, or dinner.
