     Crock Pot Lasagna

Ingredients
2-15 oz containers ricotta cheese
2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese
2 eggs
1-10 oz package frozen, chopped spinach, thawed and squeezed dry
1 envelope vegetable soup mix
2 jars pasta sauce
12 lasagna noodles, uncooked
1/2 lb ground beef, sausage or turkey, cooked
 

Instructions
In a large bowl, combine ricotta, 1 cup mozzarella, parmesan, eggs, spinach and soup mix. In another bowl, mix 1 jar of sauce and cooked meat.
In line crock pot, pour 1 cup of meatless sauce and spread evenly. Layer 4 noodles, broken to fit, then 1 cup of meat sauce and 1/2 of ricotta mix; repeat. Top with remaining 4 noodles and meatless sauce. Cook on low 5-6 hours.
Sprinkle with remaining cheese and cook 10 more minutes. Let stand 10 minutes before serving.
