If you want, you can add optional items in the center. I like to substitute the Lipton's Onion soup mix with Taco powder, and substitute Salsa for Ketchup. Next, divide the meat mixture in half. Put one half in the pan, make a trench, and then add mashed potatoes with cheddar cheese mix. Put the remaining half of the meat mixture on top and seal the edges with your fingers. Bake the same and you have a Mexican meatloaf.
