     Spinach Casserole

Ingredients
1 t shortening
1/4 c and 1 T butter
1/4 c flour
3/4 c milk
2 c chopped onion
1 pkg frozen spinach cooked
2 beaten eggs
1 c sour cream
1 8 oz jiffy corn muffin mix
 
2 T swiss cheese

Instructions
Use shortening to grease a 1 1/2 qt casserole. Melt 1/4 c butter. Whisk in flour until smooth. Remove from heat and add milk, return to heat and bring to a boil for 1 minute. Saute onion in 1 T butter for 3-5 minutes. Remove from heat and add spinach.
In a large bowl combine all ingredients except cheese. Bake 45 minutes at 350, remove, add cheese and bake for 5 minutes more.
