½ lb Italian sausage links chopped in ½ inch pcs. (can sub chk sausage)

1 med onion, chopped (1/2 cup)
|
|
1 19 oz cans white kidney beans (cannellini) rinsed and drained.
|

¾ c chicken broth
|
|
¼ c white wine (can use chk broth instead)
|
|
2 tbs fresh thyme or 1 tbls dried
|
|
2 cups spinach or escarole
|
|
½ cup parmesan cheese
|
|

Instructions |
|
|
In a pan cook onion and sausage over med-high heat for 5 min. drain fat. Add beans, The ¾ cup chk broth, and wine (or both chk broth) seasonings.
|

Bring to a boil, reduce heat, cover and simmer 5 min. stir in spinach or escarole stir till hot and garnish with cheese.
