1 can diced tomatoes – many seasoned varieties available
3 peppers red, yellow, and green chopped
1 stalk celery
¼ onion chopped
Shredded cheese for ganish (optional)
Instructions
Brown beef with celery and onion. Season with salt, pepper and garlic when almost done add peppers sauté until still crisp. (2-4 min) add tomatoes and cooked rice stir until hot. Sprinkle with cheese and serve.
