     Pot Roast

Ingredients
2 1/2 lb-3 lb end roast
2 Tbl vegetable oil
1/2 C water
salt and pepper
5 potatoes, peeled and quartered
3 onions, peeled and quartered
3 Md carrots, cut into 2 inch pieces
 

Instructions
Brown roast in oil on all sides in large pot. Addwater, cover and simmer 2 1/2 hours. Add water as needed. Salt and pepper meat as it cooks. Add potatoes, onions, and carrots. Cook about 30 minutes, adding water as needed. Remove veges and meat to a serving dish...Keep warm
Drain drippings reserving 2 tbl in pan and rest in a measuring cup. Stir in 1 Tbl flour into drippings in pan. Cook over Md heat . Add enough water to drippings to make 1 cup ..Stir into flour and cook until smooth and slightly thickened. Add 8 oz sour cream, salt and pepper ...Stir until heated
