     Unbelievable Chocolate Cake

Ingredients
1/4 cup canola oil
1 large egg
1 tsp vanilla extract
1/4 c dark brown sugar
1 c sugar
1 c buttermilk
1 1/4 c cake flour
1 tsp baking powder
1 tsp baking soda
 
1/4 c cocoa powder
1/4 c hot water

Instructions
Preheat the oven to 350. Coat an 8x8 baking pan w nonstick cooking spray. You can double ingredients and bake in 9x13 pan. In a large bowl, whisk the oil and egg until frothy. Add the vanilla, brown and white sugars. Beat w a whisk for 2 min. until the mixture is thick and smooth and the sugars have been thoroughly incorporated into the mixture. Add the buttermilk and continue to mix.
Sift the flour, baking powder, baking soda, and cocoa and stir into wet ingredients. Whisk vigorously for 1 to 2 minutes, or until batter is smooth. Pour the hot water into the batter and whisk one more time until the batter is again nice and smooth. The batter will be thin.
Pour the batter into the prepared pan and tap the pan on the counter to level and to help remove any air bubbles.
Bake for 16 to 20 minutes or until the center springs back when touched or a toothpick comes out clean. Do not over bake. Cool on a wire rack.
