     Baked eggs and Mushrooms

Ingredients
4 tbl butter,melted
1/2 lb sliced mushrooms
2 tbl onion powder
1/4 C flour
3/4 C chicken broth
1/4 C heavy cream
salt and pepper
6 eggs
1/4 C grated cheese
 
6 slices canadian bacon
6 toasted English muffin halves

Instructions
In a pan melt butter. Set 2 tbl aside. Add mushrooms and onion powder to pan...Cook until mushrooms are soft.. Stir in flour and cook until bubbly ...Stir in chicken broth and cream...Stir until smooth and thick...season with salt and pepper
Pour sauce into baking dish...Break eggs over sauce..Spoon reserved butter over eggs. Sprinkle with grated cheese. Bake uncovered n 350 oven for 15 min
Fry canadian bacon until lightly brown...Toast enlish muffins. Arrnge slice of bacon on muffin and top with egg and sauce
