     Veal Saltimbocca

Ingredients
3 tb flour
1/4 tsp white pepper
1 .b veal, cut into 1 1/2 inch squares
2 tbl olive oil
8 slices proscuitto, cut up
2 tbl beef stock
1 tbl dry white wine
1/4 lb grated gruyere cheese
2 C spinach
 

Instructions
Combine flour and pepper. Dredge veal...Place skillet over high heat until very hot. Add oil, coating bottom...Add veal and stir fry until pieces are brown about 2 minutes. Add proscuitto and stir fry 30 seconds. Add beef stock and wine and stir fry 30 seconds. Remove from heat ...Add cheese and stir...Arrange bed of spinach on platter and top with veal mixture.
