     Italian Party Flank Steak

Ingredients
1/4 C olive oil
1/4 C red wine vinegar
2 finely chopped garlic cloves
2 tbl parsley
1/4 tsp black pepper
1 Flank steak, 3/4 inch thick, butterflied
2 jars roasted peppers
1 tbl parsley
8 thin slices proscuitto
 
grated cheese
2 tbl parsley
pepper

Instructions
Mix first 5 ingredients in bag ..Add steak and marinate at room temperature for 2 hours. Remove steak from marinade. Lay meat on large piece of foil..Reserve marinade. Heat oven to 350
Place roasted peppers on top of steak to cover it..Sprinkle with parsley. Cover with proscuitto, sprinkle with grated cheese, parsley and pepper. With long side facing you lift from foil and roll lightly. Tie at 2 inch intervals with kitchen string.. Place steak in shallow baking dish ..Pour marinade over and bake for 30 min. Baste..Cut into 1/2 inch slices..Arrange on platter
