     Shrimp Campione

Ingredients
24 large shrimp
1/2 C lemon juice
12 pieces of asparagus, cooked
12 strips of roasted pepper
12 slices proscuitto
pats of butter
1 T oil
2 minced garlic cloves
1 C tomato sauce
 
1/4 C dry white wine
1/4 C chicken broth
3 tbl whipping cream

Instructions
Boil shrimp in lemon water. Flatten 1 shrimp and top with 1 cooked asparagus and 1 strip of raosted pepper. Put 2nd shrimp on top in opposite direction and wrap with proscuitto. Transfer to baking dish. Refrigerate until ready to bake. Put butter between shrimp. Heat oven to 500. Bake shrimp until butter melts. Pour sauce over and cook on top of stove until sauce is reduced
Sauce ...Heat 1 tbl oil, add minced garlic cloves, Remove garlic and add tomato sauce, wine, broth and whipping cream...Simmer 10-15 min ..Stir in 1 tbl basil
