Heat oil on medium heat in medium saucepan. Add
garlic but don't brown. Add tomato sauce. Stir. The
only difficult part is blending oil & sauce. Takes a
bit of stirring & doesn't have to be completely
mixed.

Add spices and blend. Add sugars and wine. Blend.
Bring to low boil while stirring frequently. Reduce
heat.

Simmer on low for 1 - 2 hours.

I cover but prop the lid by leaving wooden spoon in pan and drape
opening with towel to avoid splattering. Usually have a few splatters
anyway. Could probably just cover with lid and would be fine, but never
tried it. Creature of habit.
