     Sandy's Wild Rice Soup

Ingredients
6 Tbls. butter
2 Tbls. minced onion
1/2 cup flour
2 cans chicken broth
1 can cream of potato soup
2 cups cooked wild rice
1 cup minced cooked ham
1/4 cup grated carrot
3 Tbls. sliced almonds (optional)
 
1 cup half 'n half
1/2 cup milk (skim or 1%)
1/2 tsp. season salt
Snipped parsley (garnish) optional

Instructions
Melt butter in large saucepan. Saute onion. Blend in flour. Gradually add chicken broth
Cook-stirring constantly until mixture comes to a boil. Boil one minute. Stir in the rice, ham, carrots, salt and almonds
Simmer 5 minutes. Blend in half n' half with milk. Heat thoroughly. Garnish with parsley
