4 to 6 ounce jar marinated artichoke hearts, drained and chopped
frozen chopped spinach, 1 package, thawed and drained
1/4 cup chopped onion
2 cloves garlic, minced or crushed
4 ounces cream cheese
1/2 cup shredded cheese (e.g. parmesan, asiago, cheddar)
2 tablespoons butter
salt and pepper to taste
Instructions
Saute the onions and garlic in the butter. Add the spinach, artichoke hearts, and cheeses. Stir over low heat until bubbly and cheese is melted. Season to taste with salt and fresh ground pepper.
If you want it creamier, add more cream cheese. If you want it spicier, add hot sauce and/or herbs like oregano or basil. Adjust type and amount of grated cheese to your personal preference- I use parmesan and asiago.

Serve with tortilla chips or small crackers.
