     Banana Bread

1 1/4 C sugar
1/2 C margerine
2 eggs
1 1/2 C mashed bananas (3-4 whole bananas)
1/2 C buttermilk (can use 1/2 tbsp lemon juice, add milk to 1/2 cup)
1 t vanilla
2 1/2 C flour
1 tsp baking soda
1 tsp salt
1 C chopped nuts (optional)

Mix sugar and butter in large bowl. Stir in eggs until well blended. Stir in bananas, buttermilk and vanilla, beat until smooth. Stir in flour, baking soda and salt until moistened. Stir in nuts.
Pour ingredients evenly into 2 well greased 8 inch loaf pans. Bake on bottom rack at 350 for about 1 hour or until toothpick comes out clean. Cool for 10 minutes on wire racks.
Loosen from pans carefully and cool on wire racks completely (about 2 hours) before slicing.
