     Roasted South Asian Vegetables

Ingredients
1 medium cauliflower cut into florets
2 sliced half-moon unpeeled potatoes
2 diced jalapeno peppers or 1 cubed bell pepper-more mild
3 sliced carrots
1 medium sliced onion
1 tsp red pepper flakes
1/2 tsp ground coriander
1/2 tsp salt
1/2 tsp black pepper
 
2 minced garlic cloves or 1/2 dry garlic powder
1 tbsp vegetable oil

Instructions
Put all ingredients into large mixing bowl. Drizzle in vegetable oil over the top and mix until vegetables are lightly coated with oil and spices.
Put in large roasting pan and bake at 375 for about 40 minutes, stirring once about halfway.
Serving Suggestions
Serve with pita bread or rice, or serve on top of shredded cabbage.
