     Creamed Spinach

Ingredients
3/4 to 1 lb. washed spinach
1 TB butter
1/2 cup yellow onion
1 tsp garlic, minced
1 TB fresh rosemary, chopped
1/2 cup heavy cream
1/3 cup fresh grated parmesan
shaved nutmeg (to taste)
3 TB bread crumbs
 
salt & pepper (to taste)

Instructions
In large pan, melt butter over medium heat. Add onion and saute until translucent. Add garlic and saute 4 minutes longer. Add rosermary and cook 1 minute.
Add heavy cream and bring to a simmer. Add parmesan cheese. Add nutmeg. Once cheese has melted, add the spinach and breadcrumbs. Stir to combine all ingredients. Continue stirring until spinach is completely wilted and dark green (approx 4 to 6 minutes). Add salt and pepper to taste.
