In mixing bowl gradually add sugar to beaten eggs. Blend in melted butter and milk. Mix and sift together flour, baking powder, salt, cinnamon, and nutmeg. Add dry ingredients to liquid mixture. stir until blended. If too sticky, dough may be chilled until manageable

In large cooking pan or electric deep fat fryer heat cooking oil or shortening to 350. Have sufficient oil or shortening to float doughnuts, or at least 1 1/2 inches deep

On well floured surface roll out dough 3/8 inch thick. cut with doughnut cutter. cut out doughtnuts that are dried for 15 minutes before cooking absorb less fat during cooking. Drop doughnuts into hot cooking oil or shortening. Brown on one side. Fry only 3 or 4 at a time. Turn and browm on other side, or about 3 minutes in all. Drain on paper towel. Roll in powdered sugar or sprinkle with mixture of 2 tsp cinnamonand 2/3 c granulated sugar.

CHOCOLATE CAKE DOUGHNUTS-In step 1 add 1 1/2 oz melted unsweetened chocolate and 1 tsp vanilla extract and reduce flour to 3 1/4 cups.
ORANCE CAKE DOUGHNUTS-In step 1 substitute 1/4 C orange juice for milk. Add 1 TBL grated orange rind
SOUR CREAM CAKE DOUGHNUTS-In step 1 omit butter. Sutstitute dairy sour chream for milk and reduce baking powder to 1 1/2 tsp and add 1 tsp baking soda
