     The Black Eyed Pea's Squash Casserole

Ingredients
5 lbs. yellow squash
2 eggs, beaten
1 cup bread crumbs plus additional for topping
1 stick butter
1/4 cup sugar
2 TB chopped onion
salt to taste
dash of pepper
 

Instructions
Cut squash into cubed pieces. Cook in boiling water until tender. Drain and mash. Combine squash with beaten eggs, bread crumbs, butter, sugar, salt, onion and pepper.
Turn into 3 quart casserole taht has been sprayed. Cover with light layer of bread crumbs. Bake at 350 degrees for 20 to 25 minutes until lightly browned.
