     Glazed lemon squares

Ingredients
1 cup flour
1/4 cup powdered sugar
1/8 tsp. salt
1/2 cup butter
1 cup granulated sugar
2-1/2 Tbsp. flour
1/2 tsp. baking powder
1/8 tsp. salt
2 eggs, slightly beaten
 
2 Tbsp. lemon juice
1 tsp. lemon rind

Instructions
Combine 1 cup flour, powdered sugar and salt in a mixing bowl. Cut in butter until mixture resembles coarse crumbs. Press into an 8 x 8 x 2-inch pan, lined with foil and sprayed with cooking spray. Bake at 325 for 15-20 minutes until slightly golden around the edges. In a bowl, mix by hand, sugar, 2-1/2 T. flour, baking powder, 1/8 tsp. salt, eggs, lemon juice and rind. Spread over baked layer. Return to oven and bake at 325 about 25-30 minutes. Cool and glaze.
Glaze- 1/2 cup powdered sugar 1 Tbsp. lemon juice 1 Tbsp. melted butter Blend all ingredients until smooth. Frost and cool. Remove squares and foil from pan and cut into small squares.
