     Stuffed Poblano Peppers

Ingredients
6 poblano peppers
1 pkg pre-marinated fajita chicken
1 pkg mexican blend cheese
Green Chile Rice (see recipe in side dishes)
Creamy Tomatillo Sauce (see recipe in sauces)
 

Instructions
Grill poblano peppers till blackened and skin seperates. Cool peppers. Peel blackened skin from peppers. Slit opening on one side and remove seeds.
Grill fajita meat. Slice into thin fajita slices.
Stuff peppers ith green chile rice, chicken and cheese. Put in 350 degree oven till cheese melts.
Top with creamy tomatillo sauce.
