     Three Flour Bread

Ingredients
3 1/4 - 3 1/2 c flour
2 pkgs yeast
1 1/2 c whole wheat flour
1/2 c rye flour
2 c reconstituted powdered milk
1/2 c brown sugar
2 T sugar
3 T shortening, (I use Butter Flavor Crisco)
 

Instructions
Combine 1 c flour and the next 3 ingredients. Heat milk, sugars and 1 T salt and shortening, just until the shortening is melted. Add to the flour mixture. Beat at low speed for half a minute, scraping constantly. Then 3 minutes on high. Add enough flour to make a stiff dough. On a floured surface, knead 8-10 minutes. Place in a greased bowl, turning once.Cover, let rise until double, about 1 1/2 hours. Punch down, let rest for 10 minutes. Shape in 2 loaves and place in 2 greased 8x4x2 bread pans. Let rise until double. Bake at 375 for about 40 minutes.
