     Baked Eggplant

Ingredients
2 medium eggplant
2 T butter
sliver of garlic
1/2 c milk
1/8 t pepper
2 eggs
1/2 c chopped onion
1 c fine cracker crumbs
1 t salt
 
1 c grated cheese

Instructions
Peel and cube eggplant. Cook over low heat in small amount of water until tender. Add butter and seasonings. Mash slightly. Beat eggs with milk and add to eggplant. Pour mixture into a well greased 2 qt casserole. Top with crumbs and cheese. Bake at 350 for abot 30 minutes.
