     Zucchini Casserole

Ingredients
5 Cups zucchini, peeled and chopped into bite size pieces, approx. 6 small zucchini
1-1/2 cups melted butter, separated
1 cup sour cream
1 Can cream of chicken soup
2 small boxes stovetop stuffing (2 packets total)
 

Instructions
Boil chopped zucchini for 5 minutes. Drain well. Meanwhile, melt 3/4 cup butter and mix with one packet of Stove top to moisten. Press this into the bottom of a 9 x 13 pan.
In another bowl, mix together sour cream and soup,then add drained zucchini. Pour over the pressed Stovetop.
Mix another 3/4 cup melted butter with the last package of Stovetop and spread over the mixture. Bake uncovered at 350 deg. for 30 minutes.
NOTE- For a larger group, I double the zucchini, soup and sour cream, using a slightly larger baking dish. Bake this for one hour at 350 deg.
