Cut pork into small pieces. In a bowl combine pork cubes, hot sauce, 2 cloves minced garlic, ITALIAN SEASONING MIX,cajan seasoningmix,salt, and pepper and mix well. Cover and refrigerate several hours, stirring once. Then coat with 2 tbsp of floor and fry till brown on all sides.
In a large Dutch oven over medium heat, warm oil. Add onion, tomato, and remaining 2 cloves garlic and sauté until tender, about 5 minutes. Add meat and sauté 5 minutes longer. Add remaining ingredients, reduce heat to medium-low, and simmer, covered, until meat is no longer pink, 20 to 25 minutes. Remove lid and simmer until slightly thickened, about 5 minutes longer. Remove bay leaf and discard.

2 cups chopped yellow onion
1 green bell pepper, seeded and cut into 1-inch pieces
1/2 cup tomato chopped
turnip, carrot, sweet potato, potato
1/4 cup chopped parsley
1/4 teaspoon dried, crushed red pepper
1 bay leaf
