2 1/2 c. all-purpose flour
1 1/2 tsp baking soda
1/4 tsp cinnamon
1/4 tsp found nutmeg
1/4 tsp salt
3 lg ripe bananas, peeled
2 lg eggs
3/4 c. sugar
1/2 c. (1 stick) unsalted butter, melted and cooled
3/4 chopped walnuts
Confectioners' sugar, for dustin (optional)

Heat oven to 350. Coat two 8 1/2x4 1/2x 2 5/8 in loaf pans with non-stick cookingspray. Set aside
In lg bowl, combined flour, baking soda, cinnamon, nutmeg and salt. Make a well in center Mash bananas in med-size bowl. Add eggs,sugar and butter and beat until fairly smooth.
Pour banana mixture into well dry ingredients and stir just until blended. Fold in walnuts, then divide batter evenly between prepared loaf pans.
Bake loaves at 350 for 35 min until browned and tops spring back lightly when gently pressed. Remove to wire rack to cool, dust with confectioners' sugar, if desired, and serve.
