     Broccoli Salad

Ingredients
2 bunches broccoli, crowns, cut into bite size pieces
2 cups grated cheddar cheese
1 med purple onion, sliced into bite size rings
16 slices bacon, crumbled
1 cup mayo
1/2 cup sugar
2 tbsp red wine vinegar
 

Instructions
Bake bacon in oven at 415 for 20-25 min or until thoroughly cooked. Cool and crumble.
Blanch broccoli for 60-90 secs or until broccoli is crunchy - do not over cook. Cook broccoli is ice water, drain and dry on papertowels.
Combine all ingredients for salad.
Combine all ingredients for dressing. Add dressing to salad just before serving.
Serving Suggestions
Great for picnics, camping, summer parties. Can be made several days ahead of time.
