     Bread - Nannie's Buttermilk Cornbread

Ingredients
1 1/2 c yellow or white cornmeal
1/2 c flour
1t salt
1/2 t baking powder
1/2 t baking soda
1 1/2 c buttermilk
1 lg. egg lightly beaten
1/4 c bacon grease
 

Instructions
Place well seasoned cast iron skillet in HOT 450-degree for 3-5 minutes. Remove from oven and add 1/4 c bacon drippings (grease)turning to coat all sides. WARNING! Skillet will be very HOT
Combine dry ingredients in large mixing bowl. Stir in buttermilk and slightly beaten egg. Pour HOT bacon drippings into mixture and stir well.
Pour batter into HOT skillet. Bake at 450 for :25-:30 minutes Remove from skillet immediately to prevent it from becomming soggy.
The perfect compliment to Country Ham & Beans!
Serving Suggestions
Slice and serve hot with butter
