     Oven Roasted Carrots and Potatoes

Ingredients
baby carrots
2-3 red or white potatoes, sliced thin
EVOO
salt and pepper
 

Instructions
Heat oven to 400 degrees. Lay carrots side by side on a baking sheet. Potatoes can overlap slightly. Drizzle with EVOO and salt and pepper and cook for 45 minutes or so- till carrots have started to caramalize and potatoes are slightly crispy.
