4 Chicken Breasts on the bone, skin off

12 Baby Potatoes, halved
|

2 tsp (10ml) PnP Cook Additions crushed garlic paste
|

½ cup (125ml) Basil Leaves, roughly chopped
|
|
2 Tbsp (30ml) Fresh Oreganum, roughly chopped
|
|
1½ cups (375ml) Chicken Stock
|
|
1 tsp (5ml) Sugar
|
|
1 can (400g) PnP Chopped Tomatoes
|
|
8 Calamata Olives, rinsed
|
|
|
|
Milled Pepper
|
|
Optional- Red and yellow peppers, canned chickpeas, butterbeans
|

Instructions |
|
|
Preheat oven to 200°C.
|
|
|
Halve chicen breasts and place in a roasting pan with baby potatoes.
|
|
|
Mix garlic paste, herbs, chicken stock, sugar, tomatoes and olives together and season.
|
|
|
Pour over chicken and bake for 25-35 minutes.
|
|

Serve with steamed green beans.
