razor clams or another variety, shelled and cleaned
red onions
red peppers
garlic cloves
fresh rosemary
fresh parsley
garlic powder
touch of salt
garlic herb feta cheese
Instructions
Cook rice according to directions. I love my rice cooker for this job. It will cook the rice and hold it warm so I am not rushed with preparing and cooking the other ingredients.
As rice is cooking, chop clams, vegetables, and herbs.
When rice is nearly done, heat electric skillet. Prepare with olive oil. When the pan is hot, put in all clams, vegetables, and herbs. Add garlic powder and lightly salt. Cook quickly in hot pan until clams and vegetables are tender but not overdone
Serve immediately. Spoon rice onto plates. Top with clam stir-fry. Sprinkle feta cheese on lightly.
