Curried Apple and Cauliflower Soup

Ingredients
-
2 tablespoons olive or coconut oil
-
2 cups chopped sweet onions
-
4 cups (about 1 head) coarsly chopped cauliflower florets
-
2 cloves of garlic, chopped
-
2 cups cored and diced apple
-
1 cup chopped walnuts
-
1 teaspoon curry powder
-
1/2 teaspoon ground turmeric
-
1 carton organic vegetable stock
 
-
2 cups of water
-
1 tablespoon agave nectar
-
1 cup of freshly chopped cilantro

Instructions
Heat the oil in a 3 to 4- quart stockpot over medium-high heat and add the onions and cauliflower. Saute until the onion is soft and cauliflower is crisp-tender.
Add the garlic, apples, walnuts, curry powder and turmeric and continue to cook for 4-5 minutes. Add the vegetable stock , water, agave nectar and cilantro. Lower the heat to medium-low and simmer until the vegetables are fork tender.
Add salt and pepper to taste.
