     Cream Cheese Icing

Ingredients
12 oz. cream cheese, softened at room temp.
1/4 cup butter plus 2 extra tbsp, softened at room temp.
3 cups powdered sugar
1 1/2 tsp vanilla
 

Instructions
Beat til smooth. Spread on top of 1st layer of cake.
Add second layer and cover all sides and top. Decorate with green and orange tinted icing, if desired. Carrots can be made using Ziplock freezer bags with very small portion of corner removed with scissors. Fill bag's cut corner and use like an pastry bag.
