     Mississippi Mud Cake

Ingredients
4 eggs
2 cups sugar
2 sticks margarine or butter
1 1/2 cup flour, sifted
1/3 cup cocoa
2 tsp vanilla
1 cup coconut flakes
1 cup chopped nuts (recommended- pecans)
1 7oz jar marshmallow cream
 
For Frosting-
1 stick margarine or butter
6 tbsp milk
1/3 cup cocoa
1 1lb box powedered sugar
2 tsp vanilla
1 cup nuts (recommended- pecans)

Instructions
Beat eggs a sugar together. Melt margarine and add to egg mixture. Stir in cocoa, flour, vanilla, coconut flakes and nuts.
Pour into 13x9x2 inch pan. Bake in preheated 350 degree oven for 30 minutes. Remove from oven and immediately spread top with marshmallow cream. Allow to cool a few minutes, but frost while still warm.
For frosting- Melt margarine and add milk and cocoa. Stir and heat in microwave on high for 30 seconds. Stir again. Pour into bowl containing powdered sugar. Add vanilla and nuts. Beat well. Spread over the marshmallow cream layer. Cake freezes well.
Note- This is our favorite dessert. Rich, rich, rich! Great when warm or heated in microwave. -Ann Coody
