     Oklahoma Senate Bean Soup

Ingredients
1 lb white beans
Ham bone with meat
3 quarts water
1 cup cooked, mashed potatoes
3 onions, finely chopped
1 small bunch celery, including tops, finely chopped
2 garlic cloves, finely chopped
Salt and pepper to taste
1 cup cheese, optional
 

Instructions
Soak beans overnight covered well with cold water. Drain and put in soup kettle with ham bone. Add 3 quarts water. Bring to a boil and simmer 2 hours.
Stir in mashed potatoes, onions, celery, and garlic. Simmer 1 hour more until beans are thoroughly cooked. Remove ham bone and dice the meat. Return meat to the soup.
May be served topped with grated cheese.
Note- Got this recipe from my assistant when I was elected in 2000. We have enjoyed it ever since. -Senator Nichols
