     Tuna Tartar

Ingredients
1 lb Ahi Tuna (Sushi Grade)
2 Plum tomatoes
2 Large Shallots - finely minced
1/4 cup chopped chives
1/4 cup finely chopped cashews
2 Tbs peanut oil
Salt and Pepper
Garnish - Alfalfa sprouts (optional)
 

Instructions
Dice the tuna and tomatoes into 1/8 inch cubes. Combine remaining ingrediants and season with salt and ground pepper.
Place tartar into molding of choice. pack tightly and place in center of serving plate. Garnish.
Serve with home made chips. Baked Won Ton wrappers are great and healthy. Simply cut wrapper into triangles brush with ollive oil. Sprinkle with kosher salt and bake in 375 for 10 minutes total. 5 minutes per side, or until crispy.
Optional seasoning. Season all, garlic salt, onion powder.
