     Key Lime Tart

Ingredients
1 cup graham cracker crumbs
5 tblsp melted butter
2 tblsp granulated sugar
3 egg yolks
1/4 cup sugar
1/2 cup lime juice
1 can sweetened condensed milk
 

Instructions
Combine cracker crumbs, butter, and sugar. Mix well and press firmly into a tart pan. Place in freezer (may be prepared a day in advance).
To make filling, fill a medium saucepan halfway with water and bring to a boil. Combine egg yolks, sugar, and lime juice in a medium stainless steel bowl. Mix with a whisk until well combined. Place bowl over boiling water and whisk until frothy.
Remove bowl and mix in condensed milk. Pour into tart crust/pan and chill for at least 2 hours.
Serving Suggestions
This will make an authentic yellow tart.
