3/4 cup butter or margarine
1/2 tsp. salt
3 cups sifted cake flour
3/4 cup coconut milk, should not be confused with coconut water
1/4 cup fresh milk (combine both milks)
1 cup freshly grated coconut - grated fine
2 cups white sugar
6 egg whites
3 tsps. double-acting baking powder
1 tsp. flavoring (vanilla or other, optional)

Cream butter and sugar until very fluffy. Add flour sifted with baking powder alternately with milk, beginning and ending with flour. Add flavoring and finely grated coconut. Add salt to egg whites and beat until stiff, but not dry. Fold carefully into batter.
Pour into greased and floured 9x13 inch cake pan. Bake in pre-heated oven at 350 degrees farenheit about 45 minutes or until done. Remove from oven. Let cool 10 minutes. Turn onto large plate to cool.
Frost with Fluffy White Frosting and pile additional grated coconut over the top.
